A Simple Travel Lunch That Got The Job Done

Not every travel meal needs to be planned, pretty, or Instagram-worthy.

Sometimes lunch looks exactly like this.

One afternoon I found myself hungry while I was out running errands and taking photos. Instead of trying to figure out whether a restaurant would have something safe for me to eat, I stopped at a grocery store and grabbed the simplest option that would work: a plain rotisserie chicken.

Most grocery stores season their rotisserie chickens heavily, but many of them also offer a plain version. That’s the one I always look for. No mystery seasoning, no sauces, nothing complicated—just roasted chicken.

I carried it out to a nearby picnic table and called it lunch.

The bag of rosemary and garlic chips in the photo used to be something I could eat, although these days the seed oils in most chips don’t agree with me anymore. Diets change, and sometimes foods that worked in the past stop working later. That’s just part of living with dietary restrictions.

The fork? I honestly have no idea why it was in the console of my truck.

And the napkins are from Dunkin’. I can’t eat Dunkin’ Donuts either, but if someone traveling with me swings through a drive-thru, I’ll usually stash the extra napkins. When you spend enough time on the road, little things like that become surprisingly useful.

None of this meal was fancy. It wasn’t carefully plated. It wasn’t even planned very far ahead.

But it worked.

That’s really the point of the Pantry Box mindset. When restaurants aren’t reliable, you stop thinking in terms of restaurant meals and start thinking in terms of food that works. Sometimes that means cooking a full dinner at a campsite or in a hotel room. Other times it means sitting at a picnic table with a rotisserie chicken and a fork you found in the truck.

Either way, you’re fed, you’re safe, and your day keeps moving.
